Our friends at Two Rivers Specialty Meats have a passion for connecting meat eaters in BC to delicious local products like this pork shoulder roast. Before we say anything else about this pork shoulder roast, we're going to clear the air right from the start: pork shoulder is often referred to as "pork butt," which is super misleading because it definitely comes from high on the pig's shoulder. Long story short, it all started in Boston when pork shoulders used to be transported in wooden barrels, called butts, and that's how they got the name. The shoulder roast has a high-fat content, which makes it perfect for slow cooking a big meal. 


COOKING TIP: Pork shoulder roasts are most often used for pulled pork or Mexican carnitas. So take out your slow cooker for this one or get the oven ready. There's a whole lot of pulled pork and carnitas recipes out there, but the key is to bring the pork to room temperature before cooking and let it rest for at least 30 minutes after it's done. Get creative with the leftovers! Sliders! Quesadillas! Burritos! Rice bowls! You can even add it to a soup!
